Virgin olive oil

Harvest: Late December 2019-early January 2020. Later harvest than the olive used for extra virgin olive oil. It is a riper fruit. The result is a highly smooth, sweeter oil; reminiscent of “rustic” oils
Crop type: traditional. Olive trees more than 1,000 years old
Extraction process: cold extraction
Aroma and flavor: fruity and smooth; neither spicy nor bitter
Recommended uses: Perfect for those looking for a “traditional” oil, smooth on the palate; neither spicy nor bitter. In cuisine, its flavor does not overpower the other ingredients and it is recommended for use in sauces, recipes, baking, etc.
